Malteaser “Love Cake” Slice (No-Bake)

IMG_1201

I’ve dubbed this recipe “Love Cake” after a certain anaesthetic-induced rambling. After being discharged from a recent day surgery procedure, I went to the supermarket on the way home, where I told the person escorting me (as well as the whole supermarket, apparently) how “Malteasers mean love!” Don’t ask… I have no idea!

A recipe for this has been floating around the internet for a while, shared on Facebook a lot, and I thought I would try it, with a few modifications! This is really easy to make, and really easy to eat as well, haha! And best of all – no cooking required!

Ingredients

1 packet (250gm) Arrowroot Biscuits (or other plain sweet biscuit)
3/4 tin Sweetened Condensed Milk (the Skim one works fine for this recipe too)
120gm Butter
1 Tablespoon Cocoa Powder
200gm White Chocolate Melts (I used the Cadbury ones)
250gm Malteasers (About 1 1/2 of the large bags)

Crush biscuits in a food processor or by hand. I do mine in a square plastic container (with a flat bottom, as opposed to a bowl) using a potato masher – works a treat! If you use a food processor, you can choose to process them to fine crumbs or leave some small chunks of biscuits (which is what I did).

Cut Malteasers in half. Add half of the Malteasers to the biscuit mixture and combine, crushing the Malteasers slightly into smaller pieces.

Melt butter in a saucepan on the stovetop. Add condensed milk and heat. Be careful as the condensed milk will stick to the saucepan and burn if you have it too high/do not mix it enough! Mix together until combined. Sift in cocoa powder and mix until combined. Let cool slightly for about 1 minute.

Pour half of the melted mixture into biscuit mixture. Mix until combined. Add melted mixture until all biscuit is wet. The mixture should come together like a dough (i.e. all gather together in the bowl, with no crumbs left).

Press mixture into a lined slice tray (or for a slightly thicker slice, a square cake tin).

Melt white chocolate according to the instructions on the packet – I pour into a microwave safe bowl and microwave for 30 seconds at a time, mixing in between, until smooth. Pour onto the top of the biscuit mixture, and top with the remaining chopped Malteasers.

Refrigerate until set. Remove from the fridge and cut into squares before the chocolate on top if fully hard – makes it easier to cut and none cracks and chips off!

Store in an air-tight container in the fridge for up to a week!

Notes: You can add more cocoa powder if you want the slice to be more chocolatey, or you could use a chocolate biscuit, like Arnotts Chocolate Ripple biscuits.
